Chocolate Delight Cookies
A favorite recipe from my Chocolate & Everything Else Cookbook. Wonderful for any holiday or simply any time!
- ¼ c. grass-fed butter, room temperature (I use Kerrygold butter for best flavor)
- ¼ c. Enjoy Life brand chocolate chips
- 2 TBL ground flax seeds
- 3 TBL cocoa powder
- ½ c. coconut sugar or organic brown sugar
- 2 ½ c. almond flour
- ½ tsp. baking soda
- ¼ tsp. salt
- ¼ tsp. vanilla
- 4 TBL water
Frosting:
- ½ c. Enjoy Life brand chocolate chips
- 1-2 tsp. grass-fed butter (I prefer Kerrygold)
- ¼ tsp. vanilla
Preheat oven to 350 degrees.
- Melt butter and ¼ c. chocolate chips.
- Mix flax seeds, cocoa powder, sweetener, almond flour, baking soda and salt. Add in vanilla and melted butter/chocolate chip mixture. Mix well.
- Chill at least 30 minutes.
- Drop by spoonful (I use a small ice cream scooper for even sizes) onto cookie sheet (I use a silpat mat or parchment paper).
- Bake at 350 degrees for 10-12 minutes. Cool on sheet.
- Frosting: Melt chips and butter. Add in vanilla. Frost cookies and sprinkle with chopped nuts if desired.
